  • 2 cloves garlic minced
  • 8 oz wild mushrooms sliced
  • 1 tsp fresh thyme leaves
  • 2 cups vegetable broth
  • 1 cup Parmesan cheese grated

Method
 

  1. Step 1: Start by bringing a large pot of salted water to a boil. Add the orzo and cook according to the package instructions, usually around 8-10 minutes. Stir occasionally to prevent sticking. Once cooked al dente, drain the orzo in a colander and set it aside.
  2. Step 2: In the same pot, heat olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes, until it becomes translucent and softened.
  3. Step 3: Stir in the minced garlic and sliced wild mushrooms. Cook for about 7-10 minutes, stirring frequently until the mushrooms are tender.
  4. Step 4: Sprinkle in the fresh thyme leaves and pour in the vegetable broth. Bring the mixture to a gentle simmer.
