Method
- Step 1: Start by bringing a large pot of salted water to a boil. Add the orzo and cook according to the package instructions, usually around 8-10 minutes. Stir occasionally to prevent sticking. Once cooked al dente, drain the orzo in a colander and set it aside.
- Step 2: In the same pot, heat olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes, until it becomes translucent and softened.
- Step 3: Stir in the minced garlic and sliced wild mushrooms. Cook for about 7-10 minutes, stirring frequently until the mushrooms are tender.
- Step 4: Sprinkle in the fresh thyme leaves and pour in the vegetable broth. Bring the mixture to a gentle simmer.
- Step 5: Fold in the cooked orzo and mix thoroughly. Add the grated Parmesan cheese, stirring until it melts and creates a creamy texture.
- Step 6: Taste the mixture and season with salt and pepper as desired. Serve warm, garnished with fresh thyme sprigs.
Notes
This dish is highly customizable. You can switch up the mushrooms or use a plant-based cheese for a vegan version.
