- Step 1: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Step 2: Sift together the flour, cocoa powder, baking soda, baking powder, and salt in a large mixing bowl.
- Step 3: In another bowl, whisk together the granulated sugar, brown sugar, applesauce, almond milk, and vanilla extract until well combined.
- Step 4: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Step 5: Gently fold in the grated zucchini using a spatula.
- Step 6: Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes.
- Step 7: Allow the cakes to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
- Step 8: In a mixing bowl, whip the aquafaba and cream of tartar until stiff peaks form.
- Step 9: Gradually add the powdered sugar while continuing to whip until fluffy.
- Step 10: Beat the softened vegan butter and vanilla extract until creamy, then fold in the whipped aquafaba mixture until smooth.
- Step 11: Once the cakes are cool, place one layer on a serving plate and frost with aquafaba frosting. Top with the second layer and frost the top and sides.
- Step 12: Slice and serve the cake. Enjoy!
Notes
Store leftover cake in an airtight container in the refrigerator for up to 4-5 days. You can also freeze individual slices for a quick treat later on.
