Ingredients
  

For the Cookie Cups
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
For the Mascarpone Filling
  • 1/2 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup brewed espresso cooled
  • 2 tbsp coffee liqueur optional
For Garnish
  • Cocoa powder
  • Chocolate shavings

Method
 

  1. Step 1: Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. Step 2: In a small bowl, whisk together flour, baking powder, and salt.
  3. Step 3: In a larger mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Step 4: Beat in the egg and vanilla extract until well combined.
  5. Step 5: Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Step 6: Scoop about 1 tablespoon of dough into each cup of the mini muffin tin and press down slightly.
  7. Step 7: Bake for 10-12 minutes until the edges are golden brown. Allow to cool completely in the pan.
  8. Step 8: In a separate bowl, combine mascarpone cheese, heavy cream, brewed espresso, and coffee liqueur. Whip until soft peaks form.
  9. Step 9: Fill each cookie cup with the mascarpone mixture and garnish with cocoa powder and chocolate shavings.

Notes

These cookie cups can be made a day in advance; just store them in the refrigerator and let them come to room temperature before serving.
