  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper diced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tbsp Dijon mustard
  • 2 tbsp lemon juice

Method
 

  1. Step 1: Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package instructions, usually about 8-10 minutes for al dente. Once cooked, drain the pasta in a colander and rinse it under cold water to stop the cooking process.
  2. Step 2: While the pasta is cooking, wash and chop your vegetables: halve the cherry tomatoes, dice the cucumber, finely chop the red onion, and dice the bell pepper. Chop the fresh parsley as well.
  3. Step 3: In a large mixing bowl, combine your cooled pasta with the cherry tomatoes, cucumber, red onion, bell pepper, and parsley. Toss everything together gently.
  4. Step 4: In a small mixing bowl, whisk together the olive oil, Dijon mustard, lemon juice, and season with salt and pepper to taste. Whisk until well combined.
