- Step 1: Preheat your oven to 350°F (175°C). Prepare your muffin tin by lining it with paper liners or greasing it with cooking spray.
- Step 2: In a medium bowl, whisk together the dry ingredients: flour, baking soda, ginger, cinnamon, nutmeg, and salt. Set aside.
- Step 3: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Step 4: Beat in the eggs, one at a time, and then mix in the molasses.
- Step 5: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
- Step 6: Fold in the diced apples and walnuts gently using a rubber spatula.
- Step 7: Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Step 8: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Step 9: Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack.
