- Step 1: In a large skillet over medium heat, add the ground beef. Use a spatula or wooden spoon to break it up as it cooks. Cook until browned, which usually takes about 5-7 minutes. Make sure to drain any excess fat.
- Step 2: Once the beef is cooked, add the rinsed black beans, corn, diced bell peppers, and taco seasoning to the skillet. Stir well to combine and cook for an additional 5 minutes until heated through.
- Step 3: Remove the skillet from heat and let the mixture cool slightly. Lay an egg roll wrapper on a clean surface, place about 2 tablespoons of the beef mixture in the center, and roll it up tightly. Repeat with remaining wrappers and filling.
- Step 4: In a deep skillet or fryer, heat oil to 350°F (175°C). Carefully add the eggrolls in batches and fry until golden brown, about 3-4 minutes on each side. Drain on paper towels.
- Step 5: Serve warm with salsa and sour cream for dipping!

Feel free to experiment with different fillings or spices to suit your taste. You can prepare the filling a day in advance and store it in the refrigerator.
