- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: Wash and pierce the sweet potatoes with a fork. Place them on a baking sheet and roast for 45-60 minutes, until fork-tender.

- Step 7: Remove sweet potatoes from the oven, slice open lengthwise, and mash the insides slightly with a fork.
- Step 8: Spoon the creamy spinach and mushroom mixture generously over the opened sweet potatoes and serve immediately.
