- Step 1: Prepare the rhubarb by chopping it into small pieces.
- Step 2: In a medium saucepan, combine the chopped rhubarb, water, and sugar. Bring to a boil.
- Step 3: Reduce heat to low and let it simmer for about 10-15 minutes until the rhubarb is soft.
- Step 4: Strain the mixture into a bowl or pitcher using a fine mesh sieve.
- Step 5: Once cooled, stir in the rosewater and lemon juice.
- Step 6: Fill tall glasses with ice cubes and pour the rhubarb mixture over the ice.
- Step 7: Top off each glass with sparkling water.
- Step 8: Garnish with fresh mint leaves.
- Step 9: Serve immediately.
Notes
Make a larger batch and store it in the refrigerator for up to a week. Adjust sweetness to taste.
