For the crust
  • 1.5 cups all-purpose flour
  • 0.5 cup powdered sugar
  • 0.5 cup unsalted butter softened
For the filling
  • 2 cups rhubarb chopped
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 8 oz cream cheese softened
  • 0.5 cup all-purpose flour
  • 0.5 teaspoon baking powder

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C). Grease the baking dish lightly.
  2. Step 2: In a mixing bowl, combine 1 ½ cups of all-purpose flour and ½ cup of powdered sugar. Cut the softened butter into the mixture until it resembles coarse crumbs. Press the mixture firmly into the bottom of the prepared baking dish.
  3. Step 3: Bake the crust for 15 minutes or until lightly golden. Remove from the oven and let cool slightly.
  4. Step 4: In another mixing bowl, combine the chopped rhubarb and 1 cup of granulated sugar. Let it sit for 10 minutes.
  5. Step 5: In a separate bowl, beat the softened cream cheese until smooth. Add 1 teaspoon of vanilla extract and 2 large eggs, mixing until well combined. Gradually add ½ cup of all-purpose flour and ½ teaspoon of baking powder, stirring until smooth.
  6. Step 6: Gently stir the rhubarb mixture into the cream cheese mixture. Ensure well combined but do not overmix.
  7. Step 7: Pour the filling over the pre-baked crust and spread evenly.
  8. Step 8: Bake for an additional 25-30 minutes until the filling is set and lightly golden on top.
