- Step 1: Preheat your oven to 350°F (175°C). Grease the baking dish lightly.
- Step 2: In a mixing bowl, combine 1 ½ cups of all-purpose flour and ½ cup of powdered sugar. Cut the softened butter into the mixture until it resembles coarse crumbs. Press the mixture firmly into the bottom of the prepared baking dish.
- Step 3: Bake the crust for 15 minutes or until lightly golden. Remove from the oven and let cool slightly.
- Step 4: In another mixing bowl, combine the chopped rhubarb and 1 cup of granulated sugar. Let it sit for 10 minutes.
- Step 5: In a separate bowl, beat the softened cream cheese until smooth. Add 1 teaspoon of vanilla extract and 2 large eggs, mixing until well combined. Gradually add ½ cup of all-purpose flour and ½ teaspoon of baking powder, stirring until smooth.
- Step 6: Gently stir the rhubarb mixture into the cream cheese mixture. Ensure well combined but do not overmix.
- Step 7: Pour the filling over the pre-baked crust and spread evenly.
- Step 8: Bake for an additional 25-30 minutes until the filling is set and lightly golden on top.
- Step 9: Allow the bars to cool completely in the baking dish on a cooling rack. Cut into squares or bars and serve.
Notes
Store the bars in an airtight container in the refrigerator for up to a week, or freeze for up to three months.
