- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: Roll out the puff pastry on a floured surface and place it into the tart pan, trimming excess.
- Step 3: In a mixing bowl, combine rhubarb, apples, sugar, lemon juice, vanilla extract, and cornstarch.
- Step 4: Pour the fruit mixture into the tart shell.
- Step 5: Brush the edges of the pastry with the beaten egg.
- Step 6: Bake for 25-30 minutes until the pastry is golden brown and the fruit is bubbling.
- Step 7: Allow to cool slightly before serving, dust with powdered sugar if desired.
