  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar

Method
 

  1. Step 1: Start by bringing a large pot of salted water to a boil. Add 1 cup of orzo pasta and cook according to the package instructions, usually about 8-10 minutes, until al dente. Make sure to stir occasionally to prevent sticking.
  2. Step 2: Once cooked, drain the orzo in a colander and rinse it under cold water. This step stops the cooking process and cools the pasta down, making it perfect for a salad.
  3. Step 3: While the orzo is cooling, prepare your vegetables. Halve the cherry tomatoes, dice the cucumber and bell pepper, and finely chop the red onion. Place all the chopped vegetables into a large mixing bowl.
  4. Step 4: Add the crumbled feta cheese and freshly chopped basil to the bowl with the vegetables.
  5. Step 5: In a small mixing bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of red wine vinegar, and a pinch of salt and pepper.
