- Step 1: Start by washing 1/2 cup of fresh raspberries. Once clean, purée them using a blender or food processor. You should aim for a smooth consistency.
- Step 2: In a large mixing bowl, beat 1 cup of softened unsalted butter with your electric mixer on medium speed until creamy. This usually takes about 2-3 minutes.
- Step 3: Gradually add 4 cups of powdered sugar to the bowl, mixing on low speed until fully incorporated.
- Step 4: Now, add the raspberry purée, 1 teaspoon of vanilla extract, and a pinch of salt to the bowl. Mix on low speed until well combined.
- Step 5: Increase the mixer speed to medium-high and beat the buttercream for an additional 2-3 minutes.
- Step 6: If your buttercream is too thick, add a tablespoon of milk to thin it out. If it’s too thin, gradually add more powdered sugar until you reach your desired consistency.
- Step 7: If you’re not using the buttercream immediately, transfer it to an airtight container and store it in the refrigerator.
Notes
Store Raspberry Buttercream in an airtight container in the refrigerator for up to one week. Allow it to come to room temperature before re-whipping when ready to use.
