Method
- Step 1: Preheat the oven to 450°F (232°C).
- Step 2: In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, chopped thyme, kosher salt, black pepper, and Dijon mustard.
- Step 3: Pat the prime rib roast dry with paper towels and rub the herb mixture evenly over the roast.
- Step 4: Position the roast bone-side down on a rack in a roasting pan.
- Step 5: Roast the prime rib in the preheated oven for 20 minutes.
- Step 6: Reduce the oven temperature to 325°F (163°C) and continue roasting until desired internal temperature is reached, about 1.5 to 2 hours for medium-rare.
- Step 7: Let the roast rest for 20-30 minutes before carving.
- Step 8: Slice and serve with favorite sides.
Notes
Consider letting the roast come to room temperature before cooking for even cooking. Experiment with different herbs for unique flavors.
