  • 0.5 cup sparkling wine Prosecco or Champagne

  • 4 cups powdered sugar
  • 0.25 cup peach puree
  • 2 tbsp sparkling wine Prosecco or Champagne
  • 1 tsp vanilla extract

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Step 2: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
  3. Step 3: In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer until light and fluffy.
  4. Step 4: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and peach puree until combined.
  5. Step 5: Gradually add the dry ingredient mixture to the wet ingredients, alternating with the sparkling wine, starting and ending with the dry ingredients. Mix until just combined.
  6. Step 6: Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
  7. Step 7: Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
