- Step 1: Preheat your oven to 425°F (220°C).
- Step 2: Wash and scrub the potatoes thoroughly. Cut them into evenly sized cubes.
- Step 3: In a large mixing bowl, combine the cubed potatoes with olive oil, salt, black pepper, garlic powder, and dried rosemary. Toss well to coat.
- Step 4: Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
- Step 5: Roast the potatoes for 25-30 minutes, stirring halfway through.
- Step 6: Remove from the oven and garnish with fresh parsley if desired. Serve warm.
Notes
For added flavor, sprinkle some grated Parmesan cheese over the potatoes in the last 5 minutes of roasting.
