  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 8 oz mushrooms sliced
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Step 1: In a large skillet, heat the olive oil over medium heat.
  2. Step 2: Add chopped onion to the skillet and sauté until translucent, about 5 minutes.
  3. Step 3: Stir in the minced garlic and cook for an additional minute.
  4. Step 4: Add sliced mushrooms to the skillet and cook until they are tender and browned, about 6-8 minutes.
  5. Step 5: Pour in the vegetable broth and bring the mixture to a simmer.
  6. Step 6: Reduce the heat and stir in the heavy cream and dried thyme. Simmer for 5-7 minutes until the sauce thickens slightly.
  7. Step 7: Season with salt and pepper to taste.
  8. Step 8: Serve the sauce over cooked mushroom ravioli and garnish with chopped fresh parsley.

Notes

This sauce can be made ahead and stored in the refrigerator for up to three days or frozen for up to three months.
