- Step 1: In a large skillet, heat the olive oil over medium heat.
- Step 2: Add chopped onion to the skillet and sauté until translucent, about 5 minutes.
- Step 3: Stir in the minced garlic and cook for an additional minute.
- Step 4: Add sliced mushrooms to the skillet and cook until they are tender and browned, about 6-8 minutes.
- Step 5: Pour in the vegetable broth and bring the mixture to a simmer.
- Step 6: Reduce the heat and stir in the heavy cream and dried thyme. Simmer for 5-7 minutes until the sauce thickens slightly.
- Step 7: Season with salt and pepper to taste.
- Step 8: Serve the sauce over cooked mushroom ravioli and garnish with chopped fresh parsley.
