- Step 1: Preheat the oven to 375°F (190°C).
- Step 2: In a large oven-safe skillet, heat olive oil over medium heat. Add diced red onion and minced garlic. Sauté for approximately 2-3 minutes until onion is translucent and garlic is fragrant.
- Step 3: Stir in chopped spinach and cook for another 2-3 minutes until wilted.
- Step 4: Add orzo, vegetable broth, oregano, basil, and black pepper. Stir, bring to a boil, then reduce heat to simmer. Cover and cook for 8-10 minutes until orzo is al dente.
- Step 5: Remove from heat and stir in cherry tomatoes, olives, and feta cheese until well combined.
- Step 6: Transfer to the oven and bake for 15-20 minutes until heated through and slightly golden on top.
- Step 7: Garnish with fresh parsley before serving.
Notes
This dish can be made vegan by substituting feta with a vegan cheese alternative. Leftovers can be stored in the fridge for up to 3 days.
