  • 1 cup orzo pasta
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, sliced
  • 1/4 cup red onion, diced
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley, for garnish

Method
 

  1. Step 1: Preheat the oven to 375°F (190°C).
  2. Step 2: In a large oven-safe skillet, heat olive oil over medium heat. Add diced red onion and minced garlic. Sauté for approximately 2-3 minutes until onion is translucent and garlic is fragrant.
  3. Step 3: Stir in chopped spinach and cook for another 2-3 minutes until wilted.
  4. Step 4: Add orzo, vegetable broth, oregano, basil, and black pepper. Stir, bring to a boil, then reduce heat to simmer. Cover and cook for 8-10 minutes until orzo is al dente.
  5. Step 5: Remove from heat and stir in cherry tomatoes, olives, and feta cheese until well combined.
  6. Step 6: Transfer to the oven and bake for 15-20 minutes until heated through and slightly golden on top.
  7. Step 7: Garnish with fresh parsley before serving.
