- Step 1: Preheat the oven to 375°F (190°C).
- Step 2: In a large oven-safe skillet, heat the olive oil over medium heat.
- Step 3: Add the red onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
- Step 4: Stir in the orzo pasta and allow it to toast slightly.
- Step 5: Pour in the vegetable broth and bring to a boil, stirring occasionally.
- Step 6: Once boiling, reduce the heat to low. Add the spinach, cherry tomatoes, Kalamata olives, oregano, basil, and red pepper flakes (if using). Season with salt and pepper to taste. Mix well.
- Step 7: Cover the skillet and let it simmer for about 10 minutes until the orzo is tender.
- Step 8: Remove from heat and stir in the crumbled feta cheese.
- Step 9: Transfer the skillet to the preheated oven and bake for 15 minutes.
- Step 10: Let it cool for a few minutes and garnish with fresh parsley before serving.

This dish can be served on its own as a main course or paired with a side salad, roasted vegetables, or garlic bread for a complete meal.
