  • 1 medium zucchini diced
  • 1 medium bell pepper diced
  • 1 medium red onion diced
  • 2 cups spinach
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
For Garnish
  • 1 cup feta cheese crumbled
  • Salt and pepper

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
