  • 8 ounces pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil extra virgin
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper

Method
 

  1. Step 1: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually around 8-10 minutes. Be sure to stir occasionally to prevent sticking. Once cooked, drain the pasta using a colander and rinse it under cold water to cool it down quickly.
  2. Step 2: While the pasta is cooling, chop the cherry tomatoes, cucumber, red onion, and parsley.
  3. Step 3: In a large mixing bowl, combine the cooled pasta, chopped cherry tomatoes, diced cucumber, finely chopped red onion, sliced Kalamata olives, crumbled feta cheese, and chopped parsley. Gently toss together.
  4. Step 4: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Taste and adjust seasoning as necessary.
  5. Step 5: Pour the dressing over the salad and toss gently to coat all ingredients evenly. Cover and refrigerate for at least 30 minutes before serving.
