Ingredients
  

For the Ribs
  • 2 racks pork ribs baby back or spare ribs
  • 1 cup maple syrup for marinade
  • 0.5 cup bourbon good quality
  • 0.25 cup apple cider vinegar
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp brown sugar
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp cayenne pepper optional

Method
 

  1. Step 1: Preheat your smoker to 225°F (107°C).
  2. Step 2: In a mixing bowl, combine the maple syrup, bourbon, apple cider vinegar, olive oil, and Dijon mustard. Whisk until well combined.
  3. Step 3: In a separate bowl, mix together smoked paprika, garlic powder, onion powder, brown sugar, black pepper, salt, and cayenne pepper.
  4. Step 4: Remove the membrane from the back of the ribs and pat dry. Apply the spice rub evenly over both sides.
  5. Step 5: Place the ribs in a large dish or resealable plastic bag and pour the marinade over them. Marinate in the refrigerator for at least 2 hours, preferably overnight.
  6. Step 6: Bring ribs to room temperature for about 30 minutes before smoking.
  7. Step 7: Smoke the ribs in the smoker, bone side down, for 4 to 5 hours.
  8. Step 8: Baste the ribs with remaining marinade every 20 minutes during the last hour of smoking.
  9. Step 9: Let the ribs rest for 10 minutes before slicing and serving.

Notes

Consider using applewood or hickory chips for a unique smoky flavor. Letting the ribs marinate overnight will yield even better results.
