  • 4 large russet potatoes
  • 1 cup cooked and crumbled bacon
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup green onions chopped
  • 1/2 cup unsalted butter melted
  • 1/4 cup ranch dressing
  • Salt and pepper to taste
  • Optional toppings such as jalapeños or diced tomatoes

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: Wash and scrub the potatoes thoroughly under cold running water. Prick each potato several times with a fork.
  3. Step 3: Bake the potatoes directly on the oven rack or on a baking sheet lined with aluminum foil for 45-60 minutes, or until tender.
  4. Step 4: Once baked, let the potatoes cool for a few minutes, then cut each potato lengthwise and scoop out some of the flesh, leaving a small border.
  5. Step 5: In a mixing bowl, combine the scooped potato flesh, melted butter, ranch dressing, sour cream, salt, and pepper. Mix until smooth.
  6. Step 6: Fold in the cooked bacon, half of the cheddar cheese, and half of the green onions into the potato mixture.
  7. Step 7: Spoon the mixture back into the potato skins, filling them generously.
  8. Step 8: Sprinkle the remaining cheddar cheese over the stuffed potatoes.
  9. Step 9: Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, until the cheese is melted and bubbly.
  10. Step 10: Once baked, sprinkle with remaining green onions and any optional toppings. Serve warm.

Notes

You can prepare the filling ahead of time and store it in the refrigerator. Just bake the potatoes and stuff them before serving.
