  • 2 cloves garlic minced
  • 2 cups vegetable broth
  • 1 cup ricotta cheese
  • 1 cup grated Parmesan cheese
  • 1 ea lemon zest and juice
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh herbs for garnish

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a medium pot, heat olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant.
  3. Step 3: Stir in orzo pasta and cook for an additional 1-2 minutes.
  4. Step 4: Pour in vegetable broth and bring to a boil, then reduce to a simmer and cook until al dente (about 10-12 minutes).
  5. Step 5: In a large mixing bowl, combine ricotta cheese, grated Parmesan cheese, lemon zest and juice, oregano, thyme, salt, and pepper.
  6. Step 6: Once the orzo is cooked, drain any excess liquid and add it to the ricotta mixture. Stir well.
  7. Step 7: Transfer the mixture to a greased baking dish and spread evenly.
  8. Step 8: Bake for 20-25 minutes until golden and bubbly.
  9. Step 9: Let cool for a few minutes, then garnish with fresh herbs before serving.
