- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: In a medium pot, heat olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant.
- Step 3: Stir in orzo pasta and cook for an additional 1-2 minutes.
- Step 4: Pour in vegetable broth and bring to a boil, then reduce to a simmer and cook until al dente (about 10-12 minutes).
- Step 5: In a large mixing bowl, combine ricotta cheese, grated Parmesan cheese, lemon zest and juice, oregano, thyme, salt, and pepper.
- Step 6: Once the orzo is cooked, drain any excess liquid and add it to the ricotta mixture. Stir well.
- Step 7: Transfer the mixture to a greased baking dish and spread evenly.
- Step 8: Bake for 20-25 minutes until golden and bubbly.
- Step 9: Let cool for a few minutes, then garnish with fresh herbs before serving.
Notes
This baked orzo can be made ahead of time and stored in the refrigerator. It pairs well with grilled vegetables or a fresh salad.
