- Step 1: In a large mixing bowl, combine the creamy peanut butter, softened butter, powdered sugar, and vanilla extract. Mix until smooth and well blended.
- Step 2: Stir in the graham cracker crumbs and chopped honey-roasted peanuts until fully incorporated.
- Step 3: Line an 8x8-inch baking pan with parchment paper. Press the peanut butter mixture evenly into the bottom of the prepared pan.
- Step 4: In a microwave-safe bowl, combine the semisweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Step 5: Pour the melted chocolate over the peanut butter layer in the pan, spreading it evenly with a spatula.
- Step 6: Refrigerate for at least 2 hours, or until the chocolate is set.
- Step 7: Once set, lift the bars out of the pan using the parchment paper. Cut into squares or rectangles and serve.
Notes
These bars can be stored in an airtight container in the refrigerator for up to a week, and they also freeze well for up to a month.
