- Step 1: In a medium saucepan, combine the 2 cups of cranberries and 4 cups of water. Place the saucepan over medium heat and bring the mixture to a boil.
- Step 2: Once the mixture reaches a boil, reduce the heat and let it simmer for about 10-15 minutes until the cranberries have softened and burst.
- Step 3: Using a fine mesh sieve, strain the mixture into a large bowl or pitcher to separate the liquid from the cranberry solids.
- Step 4: While the juice is still warm, add in the 1/2 cup of honey and stir well until fully dissolved. Optionally, mix in the 1 teaspoon of vanilla extract.
- Step 5: Allow the juice to cool to room temperature, then transfer it to the refrigerator and chill until cold.
- Step 6: When ready to serve, pour the juice over ice in your favorite glass and garnish with fresh mint leaves.
Notes
For a sparkling twist, add sparkling water just before serving for a refreshing fizz!
