Ingredients
  

For the Pasta Salad
  • 2 cups pasta e.g., rotini, penne, or fusilli
  • 1 cup cherry tomatoes halved
  • 1 cup cucumbers diced
  • 1 cup bell peppers diced (any color)
  • 1/2 cup red onion finely chopped
  • 1/2 cup black olives sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Method
 

  1. Step 1: Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add your choice of pasta and cook according to the package instructions until it reaches an al dente texture.
  2. Step 2: Drain and Rinse: Once cooked, drain the pasta in a colander. To cool it down and stop the cooking process, rinse the pasta under cold running water. Set the drained pasta aside.
  3. Step 3: Prepare the Vegetables: While the pasta is cooling, wash and chop the cherry tomatoes, cucumbers, bell peppers, red onion, and black olives.
  4. Step 4: Combine Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumbers, bell peppers, red onion, black olives, feta cheese, and fresh parsley. Gently toss the ingredients together.
  5. Step 5: Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Taste the dressing and adjust seasoning if necessary.
  6. Step 6: Toss the Salad: Pour the dressing over the pasta salad mixture and gently toss everything together. Ensure that all the ingredients are coated with the dressing.
  7. Step 7: Chill and Serve: Cover the bowl and refrigerate the salad for at least 30 minutes before serving. When ready to serve, give the salad a quick toss and adjust the seasoning if needed.
