- Step 1: Start by bringing a large pot of salted water to a boil. Add in 8 oz of pasta of your choice. Cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
- Step 2: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 cloves of minced garlic and sauté for about 1 minute until fragrant.
- Step 3: Add 1 cup of halved cherry tomatoes and 1 cup of fresh spinach to the skillet. Cook for about 3-4 minutes, stirring occasionally, until the spinach wilts and the tomatoes soften.
- Step 4: Add the drained pasta and 1 cup of cottage cheese to the skillet. Mix everything together until well combined and heated through.
- Step 5: Season with salt and pepper to taste. Serve warm, topped with freshly grated Parmesan cheese and garnish with fresh basil if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently, adding a splash of water or olive oil to keep it moist.
