  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
  • 2 cloves garlic minced
  • 2 tbsp olive oil

Method
 

  1. Step 1: Start by bringing a large pot of salted water to a boil. Add in 8 oz of pasta of your choice. Cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
  2. Step 2: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 cloves of minced garlic and sauté for about 1 minute until fragrant.
  3. Step 3: Add 1 cup of halved cherry tomatoes and 1 cup of fresh spinach to the skillet. Cook for about 3-4 minutes, stirring occasionally, until the spinach wilts and the tomatoes soften.
  4. Step 4: Add the drained pasta and 1 cup of cottage cheese to the skillet. Mix everything together until well combined and heated through.
  5. Step 5: Season with salt and pepper to taste. Serve warm, topped with freshly grated Parmesan cheese and garnish with fresh basil if desired.
