- Step 1: Preheat your oven to 350°F (175°C). Line a cupcake pan with cupcake liners.
- Step 2: In a large mixing bowl, combine the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
- Step 3: In a separate bowl, cream together the softened butter, eggs, vanilla extract, and milk until smooth.
- Step 4: Gradually add the wet mixture to the dry ingredients, beating until smooth and well combined.
- Step 5: Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
- Step 6: Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow to cool completely.
- Step 7: For the meringue frosting, heat egg whites, sugar, and cream of tartar in a heatproof bowl over simmering water, whisking until the mixture reaches 160°F (71°C).
- Step 8: Beat the mixture with an electric mixer on high speed until stiff peaks form. Add vanilla and mix until combined.
- Step 9: Pipe the meringue frosting onto the cooled cupcakes, forming tall peaks.
- Step 10: For the chocolate coating, melt chocolate chips and coconut oil in a microwave-safe bowl until smooth.
- Step 11: Dip each frosted cupcake into the melted chocolate, allowing excess to drip off.
