- Step 1: Prepare the Filling: In a large bowl, combine the shredded chicken, chopped mixed vegetables, soy sauce, garlic powder, and ginger powder. Mix everything together until well combined.
- Step 2: Assemble the Spring Rolls: Lay a spring roll wrapper on a clean, flat surface. Place about 2 tablespoons of the chicken and veggie mixture in the center of the wrapper. Fold the sides over the filling, and then roll it tightly from the bottom to the top.
- Step 3: Preheat Your Air Fryer: Turn your air fryer to 375°F (190°C) and let it preheat for about 5 minutes.
- Step 4: Prepare for Cooking: Lightly spray the assembled spring rolls with cooking spray.
- Step 5: Air Fry the Spring Rolls: Place the spring rolls in the air fryer basket in a single layer, ensuring they are not touching. Air fry them for 10-12 minutes, flipping them halfway through.
- Step 6: Make the Peanut Sauce: In a small bowl, whisk together the peanut butter, soy sauce, honey or maple syrup, rice vinegar, and sesame oil. Add water to thin the sauce if necessary.
- Step 7: Serve and Enjoy: Once the spring rolls are golden brown and crispy, remove them from the air fryer and let them cool for a moment. Serve warm with the peanut sauce on the side for dipping.
