Ingredients

  • 1 cup cooked chicken shredded
  • 1 cup mixed vegetables finely chopped carrots, bell peppers, and cabbage
  • 8 pieces spring roll wrappers look for rice paper wrappers
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp ginger powder
For the Peanut Sauce
  • 1/4 cup peanut butter creamy or crunchy
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • Water
  • Cooking spray

Method
 

  1. Step 1: Prepare the Filling: In a large bowl, combine the shredded chicken, chopped mixed vegetables, soy sauce, garlic powder, and ginger powder. Mix everything together until well combined.
  2. Step 2: Assemble the Spring Rolls: Lay a spring roll wrapper on a clean, flat surface. Place about 2 tablespoons of the chicken and veggie mixture in the center of the wrapper. Fold the sides over the filling, and then roll it tightly from the bottom to the top.
  3. Step 3: Preheat Your Air Fryer: Turn your air fryer to 375°F (190°C) and let it preheat for about 5 minutes.
  4. Step 4: Prepare for Cooking: Lightly spray the assembled spring rolls with cooking spray.
  5. Step 5: Air Fry the Spring Rolls: Place the spring rolls in the air fryer basket in a single layer, ensuring they are not touching. Air fry them for 10-12 minutes, flipping them halfway through.
  6. Step 6: Make the Peanut Sauce: In a small bowl, whisk together the peanut butter, soy sauce, honey or maple syrup, rice vinegar, and sesame oil. Add water to thin the sauce if necessary.
  7. Step 7: Serve and Enjoy: Once the spring rolls are golden brown and crispy, remove them from the air fryer and let them cool for a moment. Serve warm with the peanut sauce on the side for dipping.
