- Step 1: In a medium saucepan, combine the 2 cups of fresh or frozen cranberries with 4 cups of water. Bring the mixture to a boil over medium heat, stirring occasionally to ensure even cooking.
- Step 2: Once boiling, reduce the heat to a simmer. Allow the mixture to simmer for about 10-15 minutes or until the cranberries burst and soften.
- Step 3: After simmering, remove the saucepan from heat. Using a fine mesh sieve, strain the mixture into a bowl. Press down on the solids with the back of a spoon to extract as much liquid as possible.
- Step 4: Stir in the 1 cup of sugar, 1 cup of orange juice, and 1 teaspoon of vanilla extract into the strained cranberry liquid. Mix well until the sugar is fully dissolved.
- Step 5: Transfer the cranberry mixture into a chilling container and refrigerate for at least 1 hour.
- Step 6: When ready to serve, fill glasses with ice cubes and pour the chilled cranberry drink over the ice. Garnish with fresh mint leaves.
Notes
Store the Handcrafted Cranberry Fruit Drink in an airtight container in the refrigerator. It can last for up to a week, but it's best enjoyed fresh.
