  • 2 cups fresh or frozen cranberries
  • 4 cups water

  • 1 cup orange juice
  • 1 teaspoon vanilla extract
  • Fresh mint leaves

Method
 

  1. Step 1: In a medium saucepan, combine the 2 cups of fresh or frozen cranberries with 4 cups of water. Bring the mixture to a boil over medium heat, stirring occasionally to ensure even cooking.
  2. Step 2: Once boiling, reduce the heat to a simmer. Allow the mixture to simmer for about 10-15 minutes or until the cranberries burst and soften.
  3. Step 3: After simmering, remove the saucepan from heat. Using a fine mesh sieve, strain the mixture into a bowl. Press down on the solids with the back of a spoon to extract as much liquid as possible.
  4. Step 4: Stir in the 1 cup of sugar, 1 cup of orange juice, and 1 teaspoon of vanilla extract into the strained cranberry liquid. Mix well until the sugar is fully dissolved.
  5. Step 5: Transfer the cranberry mixture into a chilling container and refrigerate for at least 1 hour.
  6. Step 6: When ready to serve, fill glasses with ice cubes and pour the chilled cranberry drink over the ice. Garnish with fresh mint leaves.

Notes
