For the Stuffed Zucchini Boats
  • 4 medium zucchinis
  • 1 lb ground turkey
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup cooked rice (white or brown)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • Fresh parsley for garnish

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: Cut the zucchinis in half lengthwise and scoop out the center to create a boat shape.
  3. Step 3: In a skillet over medium heat, add olive oil, then add diced onion and minced garlic. Sauté until the onion is translucent.
  4. Step 4: Add ground turkey to the skillet and cook until browned, about 5-7 minutes.
  5. Step 5: Stir in diced tomatoes, cooked rice, Italian seasoning, salt, and pepper. Let simmer for 5 minutes.
  6. Step 6: Add reserved zucchini flesh into the turkey mixture and stir until well combined.
  7. Step 7: Stuff the zucchini halves with the turkey mixture.
  8. Step 8: Place the stuffed zucchini in a baking dish and sprinkle shredded mozzarella on top.
  9. Step 9: Bake in the preheated oven for 25-30 minutes until the zucchinis are tender and the cheese is melted.
