- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: Cut the zucchinis in half lengthwise and scoop out the center to create a boat shape.
- Step 3: In a skillet over medium heat, add olive oil, then add diced onion and minced garlic. Sauté until the onion is translucent.
- Step 4: Add ground turkey to the skillet and cook until browned, about 5-7 minutes.
- Step 5: Stir in diced tomatoes, cooked rice, Italian seasoning, salt, and pepper. Let simmer for 5 minutes.
- Step 6: Add reserved zucchini flesh into the turkey mixture and stir until well combined.
- Step 7: Stuff the zucchini halves with the turkey mixture.
- Step 8: Place the stuffed zucchini in a baking dish and sprinkle shredded mozzarella on top.
- Step 9: Bake in the preheated oven for 25-30 minutes until the zucchinis are tender and the cheese is melted.
- Step 10: Garnish with fresh parsley before serving.
Notes
To make it vegetarian, substitute ground turkey with cooked lentils or black beans. Store leftovers in an airtight container in the refrigerator for up to three days.
