- Step 1: Preheat your oven to 425°F (220°C).
- Step 2: Wash the baby potatoes thoroughly and halve each potato. Place in a large mixing bowl.
- Step 3: Drizzle the olive oil over the potatoes and toss until evenly coated.
- Step 4: In a separate bowl, combine grated Parmesan cheese, garlic powder, onion powder, paprika, and salt and pepper to taste.
- Step 5: Sprinkle the cheese mixture over the oiled potatoes and toss again until well-coated.
- Step 6: Line a baking sheet with parchment paper and spread the coated potatoes in a single layer.
- Step 7: Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
- Step 8: Remove from oven, let cool for a few minutes, and sprinkle with chopped parsley before serving.
- Step 9: Serve warm as a side dish or snack.
Notes
Leftover potatoes can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven to restore crispiness.
