  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • 1 tbsp cornstarch

  • 1 cup gluten-free oats
  • 1/2 cup almond flour
  • 1/4 cup brown sugar
  • 1/4 cup melted coconut oil or unsalted butter
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup sliced almonds optional

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large mixing bowl, combine sliced peaches, granulated sugar, lemon juice, cinnamon, and cornstarch. Toss gently and transfer to a greased baking dish.
  3. Step 3: In a separate bowl, mix gluten-free oats, almond flour, brown sugar, melted coconut oil (or butter), vanilla extract, and salt until combined. If using, fold in sliced almonds.
  4. Step 4: Spread the topping evenly over the peach filling. Bake for 25-30 minutes until golden brown and bubbly.
  5. Step 5: Cool for a few minutes before serving warm, optionally with vanilla ice cream.

Notes
