Ingredients
  

For the Salad
  • 1 small head green cabbage chopped
  • 1 cup cherry tomatoes halved
  • 1 cup corn canned or frozen
  • 1 cup kidney beans rinsed and drained
  • 1 cup shredded cheddar cheese
  • 1 cup Fritos corn chips
  • 1/2 cup red onion diced
  • 1 cup ranch dressing
  • 1 tbsp taco seasoning
  • Salt and pepper to taste

Method
 

  1. Step 1: Chop the green cabbage into bite-sized pieces, halve the cherry tomatoes, and dice the red onion. If using frozen corn, thaw it beforehand.
  2. Step 2: In a large mixing bowl, combine the chopped cabbage, halved cherry tomatoes, corn, rinsed kidney beans, shredded cheddar cheese, and diced red onion. Mix gently.
  3. Step 3: In a separate bowl, mix the ranch dressing with the taco seasoning until well combined.
  4. Step 4: Pour the ranch dressing mixture over the salad ingredients and toss gently to coat.
  5. Step 5: Just before serving, add the Fritos corn chips and toss lightly to combine.
  6. Step 6: Season with salt and pepper to taste and serve immediately.

Notes

Best served fresh. Add dressing and Fritos just before serving to maintain crunchiness.
