- Step 1: Chop the green cabbage into bite-sized pieces, halve the cherry tomatoes, and dice the red onion. If using frozen corn, thaw it beforehand.
- Step 2: In a large mixing bowl, combine the chopped cabbage, halved cherry tomatoes, corn, rinsed kidney beans, shredded cheddar cheese, and diced red onion. Mix gently.
- Step 3: In a separate bowl, mix the ranch dressing with the taco seasoning until well combined.
- Step 4: Pour the ranch dressing mixture over the salad ingredients and toss gently to coat.
- Step 5: Just before serving, add the Fritos corn chips and toss lightly to combine.
- Step 6: Season with salt and pepper to taste and serve immediately.
Notes
Best served fresh. Add dressing and Fritos just before serving to maintain crunchiness.
