Ingredients

  • 12 oz fresh tortellini choose cheese or meat-filled based on preference
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup black olives sliced
  • 1/2 cup bell pepper diced (any color will do)
  • 1/4 cup fresh basil chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Equipment

  • Large Pot
  • Colander
  • Large Mixing Bowl
  • Small Bowl
  • Whisk
  • Cutting Board
  • Knife
  • Serving Spoon

Method

  1. Step 1: Begin by bringing a large pot of salted water to a boil. Add the fresh tortellini and cook according to the package instructions, usually around 3-5 minutes until they float to the surface.
  2. Step 2: Once cooked, carefully drain the tortellini in a colander. Rinse them under cold water to stop the cooking process.
  3. Step 3: While the tortellini is cooling, chop the cherry tomatoes, cucumber, red onion, black olives, and bell pepper. Aim for uniform sizes for even distribution in the salad.
  4. Step 4: In a large mixing bowl, combine the cooled tortellini with the prepared vegetables and the chopped fresh basil. Gently toss them together.
  5. Step 5: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, and a pinch of salt and pepper. Adjust the seasoning to your liking.
  6. Step 6: Pour the dressing over the tortellini salad. Toss gently to combine, ensuring that the dressing coats all the ingredients evenly.
  7. Step 7: You can serve the salad immediately, topped with grated Parmesan cheese. Alternatively, for a more robust flavor, refrigerate it for 30 minutes before serving.

Notes
