Ingredients
  

For the Enchiladas
  • 1 lb ground turkey
  • 1 can (15 oz) black beans rinsed and drained
  • 1 cup corn fresh, frozen, or canned
  • 1 cup diced tomatoes canned or fresh
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 pieces flour or corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheese cheddar or Mexican blend
  • Fresh cilantro

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic. Sauté until the onions are soft and translucent, about 3-4 minutes.
  3. Step 3: Add ground turkey to the skillet. Cook until browned and cooked through, breaking it apart with a spatula. Drain excess fat.
  4. Step 4: Stir in black beans, corn, diced tomatoes, chili powder, cumin, salt, and black pepper. Cook for an additional 5 minutes, mixing well.
  5. Step 5: Spread a thin layer of enchilada sauce on the bottom of a 9x13 inch baking dish.
  6. Step 6: Fill each tortilla with the turkey and bean mixture, roll tightly, and place seam-side down in the baking dish.
  7. Step 7: Pour the remaining enchilada sauce over the rolled tortillas and sprinkle shredded cheese on top.
  8. Step 8: Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  9. Step 9: Allow to cool slightly before serving. Garnish with fresh cilantro if desired.
  10. Step 10: For freezing, let them cool completely, then cover tightly and store in the freezer for up to 3 months.
