Method
- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic. Sauté until the onions are soft and translucent, about 3-4 minutes.
- Step 3: Add ground turkey to the skillet. Cook until browned and cooked through, breaking it apart with a spatula. Drain excess fat.
- Step 4: Stir in black beans, corn, diced tomatoes, chili powder, cumin, salt, and black pepper. Cook for an additional 5 minutes, mixing well.
- Step 5: Spread a thin layer of enchilada sauce on the bottom of a 9x13 inch baking dish.
- Step 6: Fill each tortilla with the turkey and bean mixture, roll tightly, and place seam-side down in the baking dish.
- Step 7: Pour the remaining enchilada sauce over the rolled tortillas and sprinkle shredded cheese on top.
- Step 8: Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until cheese is bubbly and golden.
- Step 9: Allow to cool slightly before serving. Garnish with fresh cilantro if desired.
- Step 10: For freezing, let them cool completely, then cover tightly and store in the freezer for up to 3 months.
