For the Pasta Salad
  • 8 oz pasta your choice of rotini, penne, or any shape
  • 1 cup cherry tomatoes halved
  • 1 cup black beans drained and rinsed
  • 1 cup corn fresh, canned, or frozen
  • 1 red bell pepper diced
  • 1 avocado diced
  • ½ cup red onion finely chopped
  • ¼ cup fresh cilantro chopped
  • ½ cup shredded cheese cheddar or Mexican blend
  • ¼ cup olive oil
  • 2 tbsp lime juice freshly squeezed
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Method
 

  1. Step 1: Start by bringing a large pot of salted water to a boil. Once boiling, add your pasta of choice, such as rotini or penne. Cook according to the package instructions until al dente, usually around 8-10 minutes. Drain in a colander and rinse under cold water.
  2. Step 2: While the pasta is cooking, prepare the fresh vegetables. Dice the red bell pepper and avocado, halve the cherry tomatoes, and finely chop the red onion and cilantro.
  3. Step 3: In a large mixing bowl, add the cooled pasta, cherry tomatoes, black beans, corn, diced red bell pepper, avocado, red onion, cilantro, and shredded cheese.
  4. Step 4: In a small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and pepper. Adjust seasoning as needed.
  5. Step 5: Pour the dressing over the pasta salad mixture. Using a spatula or tongs, gently toss everything together until well combined.
  6. Step 6: For the best flavor, cover the salad and chill in the refrigerator for at least 30 minutes before serving.
