- Step 1: Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Step 2: In a large mixing bowl, cream together ½ cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy.
- Step 3: Add the 2 large eggs one at a time, mixing well after each addition. Stir in ½ cup of milk, 1 teaspoon of vanilla extract, ¼ cup of fresh lime juice, and the zest of 1 lime until well combined.
- Step 4: In a separate bowl, whisk together 1 ½ cups of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and ½ teaspoon of salt.
- Step 5: Gradually add the dry mixture to the wet ingredients, mixing until just combined. Gently fold in ½ cup of diced fresh strawberries.
- Step 6: Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
- Step 7: Bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool in the tin for about 5 minutes before transferring to a cooling rack.
- Step 8: For the frosting, beat 1 cup of softened unsalted butter until creamy. Gradually add 4 cups of powdered sugar, mixing until smooth and fluffy.
- Step 9: Add 2 tablespoons of fresh lime juice, 1 teaspoon of vanilla extract, and a pinch of salt. Mix until well combined, adding 1 tablespoon of tequila if desired.
- Step 10: Once the cupcakes are completely cooled, frost each with the lime frosting and garnish with fresh strawberries and lime slices.
