Ingredients

  • 1.5 cups grated zucchini squeeze out excess moisture
  • 1/3 cup honey
  • 1/3 cup vegetable oil or melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour or whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 cup chopped nuts or chocolate chips (optional) for customization

Method
 

  1. Step 1: Preheat the oven to 350°F (175°C).
