- Step 1: Start by heating the olive oil in a skillet over medium-high heat. Season the beef chuck roast generously with salt, black pepper, garlic powder, onion powder, and dried thyme. Sear the roast on all sides until beautifully browned, about 3-4 minutes per side.
- Step 2: While the roast is searing, prepare your vegetables. In your crock pot, place the carrots, potatoes, and onion. Pour the beef broth over them.
- Step 3: Once the roast is seared, place it on top of the vegetables in the crock pot. Cover the crock pot with its lid.
- Step 4: Cook the roast on low for 8 to 10 hours or on high for 4 to 5 hours until the meat is tender and can be easily shredded with a fork.
- Step 5: Once your roast is cooked, remove it from the crock pot along with the vegetables. Let it rest for a few minutes before slicing or shredding.
