- Step 1: In a large skillet, heat 2 tablespoons of olive oil over medium heat. This will help achieve a nice golden color on the chicken.
- Step 2: Add the 1 lb of boneless, skinless chicken breasts to the skillet. Season them with salt, pepper, and the ranch seasoning mix. Cook for about 6-8 minutes on each side, or until the chicken is cooked through and no longer pink in the center.
- Step 3: Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes. After resting, use a fork or potato masher to smash the chicken into smaller pieces.
- Step 4: In the same skillet, sprinkle a thin layer of shredded cheese on the bottom and let it melt slightly.
- Step 5: Add a portion of the smashed chicken on top of the melted cheese and press down gently. Cook for an additional 2-3 minutes until the cheese is golden and crispy.
- Step 6: Carefully remove the crispy cheese and chicken from the skillet and place it onto a tortilla. Top it generously with chopped dill pickles and any additional toppings you desire.
- Step 7: Repeat the process with the remaining chicken and tortillas until you have a delicious stack of tacos ready to serve.
- Step 8: Serve warm, garnished with fresh dill if desired.
