- Step 1: Start by bringing a large pot of salted water to a boil. Add 8 ounces of your chosen pasta (elbow macaroni or rotini) and cook according to package instructions until al dente. This usually takes about 8-10 minutes.
- Step 2: Once the pasta is cooked, drain it using a colander. Rinse the pasta under cold water to cool it down.
- Step 3: While the pasta is cooking, cook 6 slices of bacon in a skillet over medium heat until crispy. Transfer the bacon to a paper towel-lined plate to absorb excess grease and crumble it.
- Step 4: Dice 1 cup of dill pickles and finely chop 1/2 cup of red onion.
- Step 5: In a separate bowl, combine 1/2 cup of mayonnaise, 1/4 cup of sour cream, 2 tablespoons of dill pickle juice, and 1 teaspoon of garlic powder. Whisk until smooth.
- Step 6: In your large mixing bowl, combine the cooled pasta, crumbled bacon, diced dill pickles, and chopped red onion. Pour the dressing over the pasta mixture and toss until evenly coated.
- Step 7: Cover the bowl with plastic wrap or transfer the salad to a refrigerator-safe container. Refrigerate for at least 30 minutes to allow the flavors to meld together.
- Step 8: Once chilled, give the salad a quick toss before serving. If desired, garnish with fresh dill.
