  • 8 oz pasta elbow macaroni or rotini
  • 6 slices bacon cooked until crispy and crumbled
  • 1 cup dill pickles diced
  • 0.5 cup red onion finely chopped
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 2 tbsp dill pickle juice
  • 1 tsp garlic powder

Method
 

  1. Step 1: Start by bringing a large pot of salted water to a boil. Add 8 ounces of your chosen pasta (elbow macaroni or rotini) and cook according to package instructions until al dente. This usually takes about 8-10 minutes.
  2. Step 2: Once the pasta is cooked, drain it using a colander. Rinse the pasta under cold water to cool it down.
  3. Step 3: While the pasta is cooking, cook 6 slices of bacon in a skillet over medium heat until crispy. Transfer the bacon to a paper towel-lined plate to absorb excess grease and crumble it.
  4. Step 4: Dice 1 cup of dill pickles and finely chop 1/2 cup of red onion.
  5. Step 5: In a separate bowl, combine 1/2 cup of mayonnaise, 1/4 cup of sour cream, 2 tablespoons of dill pickle juice, and 1 teaspoon of garlic powder. Whisk until smooth.
  6. Step 6: In your large mixing bowl, combine the cooled pasta, crumbled bacon, diced dill pickles, and chopped red onion. Pour the dressing over the pasta mixture and toss until evenly coated.
