Ingredients
  

  • 8 oz elbow macaroni the star of the dish
  • 6 large hard-boiled eggs peeled and chopped
  • 1/2 cup mayonnaise base of the dressing
  • 2 tbsp Dijon mustard adds zest and depth
  • 1 tbsp apple cider vinegar provides acidity
  • 1/4 cup red onion finely chopped
  • 1/4 cup celery adds crunch
  • 1/4 cup sweet pickle relish brings sweetness
  • Salt and pepper
  • Paprika
  • Fresh parsley (optional)

Method
 

  1. Step 1: Cook the elbow macaroni in a large pot of boiling salted water according to package instructions until al dente, about 7-10 minutes. Drain and rinse under cold water.
  2. Step 2: If not using pre-cooked eggs, boil 6 large eggs, cover with water, and bring to a boil. Remove from heat and let sit for 12-15 minutes. Peel and chop the eggs.
  3. Step 3: In a large mixing bowl, combine chopped eggs, mayonnaise, Dijon mustard, and apple cider vinegar. Mix gently with a fork.
  4. Step 4: Add red onion, celery, and sweet pickle relish to the egg mixture. Stir gently to combine.
  5. Step 5: Fold in the cooled macaroni until well coated with the dressing.
  6. Step 6: Season the salad with salt and pepper to taste. Adjust seasoning as needed.
  7. Step 7: Garnish with paprika and fresh parsley if desired. Cover and refrigerate for at least 30 minutes before serving.
