- Step 1: Cook the elbow macaroni in a large pot of boiling salted water according to package instructions until al dente, about 7-10 minutes. Drain and rinse under cold water.
- Step 2: If not using pre-cooked eggs, boil 6 large eggs, cover with water, and bring to a boil. Remove from heat and let sit for 12-15 minutes. Peel and chop the eggs.
- Step 3: In a large mixing bowl, combine chopped eggs, mayonnaise, Dijon mustard, and apple cider vinegar. Mix gently with a fork.
- Step 4: Add red onion, celery, and sweet pickle relish to the egg mixture. Stir gently to combine.
- Step 5: Fold in the cooled macaroni until well coated with the dressing.
- Step 6: Season the salad with salt and pepper to taste. Adjust seasoning as needed.
- Step 7: Garnish with paprika and fresh parsley if desired. Cover and refrigerate for at least 30 minutes before serving.
