- Step 1: In a large mixing bowl, combine the flour, matcha powder, sugar, baking powder, baking soda, and salt. Use a whisk to ensure that all the dry ingredients are well blended.
- Step 2: In another bowl, whisk together the milk, egg, melted butter (or coconut oil), and vanilla extract until smooth and fully combined.
- Step 3: Pour the wet mixture into the bowl with the dry ingredients. Using a spatula or whisk, gently stir until just combined, being careful not to overmix.
- Step 4: Heat a non-stick skillet or griddle over medium heat. If not non-stick, lightly grease with oil or butter.
- Step 5: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.
- Step 6: Transfer cooked pancakes to a cooling rack or warm oven to keep them warm while finishing the remaining batter.
- Step 7: Serve warm with your choice of toppings such as maple syrup, fresh fruits, or yogurt.
Notes
For extra fluffiness, let the batter rest for about 5-10 minutes before cooking. This helps the baking powder activate.
