  • 1 bag Doritos (nacho cheese flavored) providing that irresistible crunch
  • 1 lb ground beef a great source of protein

  • 1 cup cherry tomatoes halved

  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup black beans rinsed and drained
  • 1/2 cup corn canned or frozen

Method
 

  1. Step 1: In a skillet over medium heat, add the ground beef. Using a spatula, break it apart as it cooks. Cook until browned, about 5-7 minutes. Make sure to drain any excess fat.
  2. Step 2: After browning the beef, sprinkle the taco seasoning over it and add water as per the packet instructions. Allow it to simmer until thickened, about 3-5 minutes.
  3. Step 3: In a large mixing bowl, combine the shredded lettuce, halved cherry tomatoes, black beans, corn, diced red onion, and shredded cheese. Toss gently to mix.
  4. Step 4: Once the beef mixture has cooled slightly, add it to the large bowl with the salad ingredients.
  5. Step 5: Open the bag of Doritos and crush them slightly. Fold the crushed Doritos into the salad mixture just before serving.
  6. Step 6: In a small mixing bowl, combine the sour cream and salsa. Stir well to mix.
  7. Step 7: Drizzle the sour cream and salsa mixture over the salad or serve it on the side.
