- Step 1: Preheat the air fryer to 375°F (190°C).
- Step 2: Slice the zucchini into thin rounds, about 1/4 inch thick.
- Step 3: In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well.
- Step 4: In another bowl, beat the two large eggs until fully combined.
- Step 5: Dip each zucchini slice into the egg, then coat with the breadcrumb mixture.
- Step 6: Arrange the coated zucchini chips in a single layer in the air fryer basket. Spray lightly with olive oil.
- Step 7: Air fry the zucchini chips for 10-12 minutes until golden brown and crispy, shaking the basket halfway through.
- Step 8: While the zucchini chips are cooking, mix together the Greek yogurt, lemon juice, dried dill, garlic powder, salt, and pepper in a small bowl.
- Step 9: Serve the zucchini chips warm with the lemon herb sauce on the side.
Notes
For extra crunch, consider double-dipping your zucchini slices in the egg and breadcrumb mixture. If you have leftovers, store them in an airtight container. Re-crisp them in the air fryer for a few minutes before serving again.
