- Step 1: In a large pot, combine shredded chicken, white beans, corn, diced onion, minced garlic, and diced green chilies. Pour in chicken broth and heavy cream, then add ground cumin, chili powder, salt, and pepper. Stir thoroughly to combine.
- Step 2: Place the pot over medium heat. Stir occasionally until the mixture reaches a simmer, about 5-7 minutes. Reduce heat slightly and let it cook for an additional 10-15 minutes.
- Step 3: While the chili is simmering, warm the tortillas in a skillet over low heat for about 30 seconds on each side or in the microwave for about 15-20 seconds.
- Step 4: Assemble your tacos by placing a generous spoonful of the creamy chicken chili mixture onto the center of each tortilla.
- Step 5: Garnish each taco with fresh cilantro and sliced jalapeƱos. Serve with lime wedges on the side.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or in the microwave, adding a splash of chicken broth if the mixture thickens too much.
