  • 8 oz rotini pasta or other pasta shapes
  • 2 cups cooked chicken shredded
  • 1 cup cherry tomatoes halved
  • 1 cup romaine lettuce chopped
  • 1/2 cup Caesar dressing store-bought or homemade
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup croutons for topping
  • Salt and pepper to taste

Method
 

  1. Step 1: Cook the rotini pasta in a large pot of salted water according to the package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water.
  2. Step 2: In a large mixing bowl, combine the cooled pasta, shredded cooked chicken, halved cherry tomatoes, and chopped romaine lettuce.
  3. Step 3: Add Caesar dressing to the bowl and gently toss until all ingredients are well coated.
  4. Step 4: Stir in grated Parmesan cheese and season with salt and pepper to taste.
  5. Step 5: Just before serving, sprinkle croutons on top for added crunch.

Notes

This pasta salad can be made ahead of time and stored in the refrigerator for up to 3-5 days. Just add croutons right before serving to keep them crunchy.
