- Step 1: Preheat your oven to 350°F (175°C). Grease and flour your loaf pan.
- Step 2: Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
- Step 3: In a large mixing bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until creamy.
- Step 4: In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Step 5: Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
- Step 6: Pour the batter into the prepared loaf pan and spread it evenly.
- Step 7: Bake for 50-60 minutes. Check for doneness with a toothpick.
- Step 8: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
