For the Crust
  • 1.5 cups graham cracker crumbs
  • 0.33 cup granulated sugar
  • 0.5 cup unsalted butter melted
For the Cheesecake Layer
  • 16 oz cream cheese softened
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.5 tsp ground cinnamon
For the Topping
  • 0.5 cup granulated sugar
  • 1 tbsp ground cinnamon
  • 0.5 cup unsalted butter melted

Method
 

  1. Step 1: Preheat your oven to 325°F (163°C).
  2. Step 2: Grease a 9x9-inch baking pan to prevent the bars from sticking.
  3. Step 3: In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press this mixture evenly into the bottom of the prepared pan.
  4. Step 4: In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add in the eggs, vanilla extract, and ground cinnamon and mix until fully incorporated.
  5. Step 5: Gently pour the cheesecake filling over the crust in the baking pan and use a spatula to spread it evenly.
  6. Step 6: Place the pan in the preheated oven and bake for 25-30 minutes, or until the cheesecake is set and the edges are slightly golden.
