- Step 1: Preheat your oven to 325°F (163°C).
- Step 2: Grease a 9x9-inch baking pan to prevent the bars from sticking.
- Step 3: In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press this mixture evenly into the bottom of the prepared pan.
- Step 4: In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add in the eggs, vanilla extract, and ground cinnamon and mix until fully incorporated.
- Step 5: Gently pour the cheesecake filling over the crust in the baking pan and use a spatula to spread it evenly.
- Step 6: Place the pan in the preheated oven and bake for 25-30 minutes, or until the cheesecake is set and the edges are slightly golden.
- Step 7: While the cheesecake is baking, combine the granulated sugar and ground cinnamon in a small bowl.
- Step 8: Once the cheesecake is done baking, brush the top with the melted butter and immediately sprinkle the cinnamon sugar mixture evenly over the top.
- Step 9: Allow the cheesecake bars to cool to room temperature before transferring them to the refrigerator. Refrigerate for at least 2 hours.
- Step 10: Once chilled, slice the bars into squares and serve.
Notes
Store leftover Churro Cheesecake Bars in an airtight container in the refrigerator for up to 5 days. You can also freeze them for longer storage.
